I have a 2000 Chevy Blazer with an aftermarker Megatronix keyless entry system (no alarm). I just bought new remotes for it and in the programming instructions it says to find the valet switch? What is that? and where is it?

A valet switch is normally a small push button or toggle switch that mounts in a 1/4" hole so the switch is relatively small. Normally these are located under the driver's side dash in a hidden location. Take a look at the area to the left of your pedals, normally they are mounted there or mounted in what I refer to a 'dangle' mount, zip tied to a factory harness. The valet switch is a switch that allows manual over ride of an alarm system in the event of a system malfunction or lost remote.
AnswerI am not familiar with that particular product. However it appears that Autopage manufacturers the CarPro units. It appears as if they do not list the RKE-1000 but I found this manual:
