You can wire without it by tracing out all the wires and making certain each channel output is connected by soldering or by electrical twist joints to the speakers they are supposed to go to.

The wiring harness makes it easier to plug to gether.  It also makes it easier in case you need to remove the head unit for eventual repairs or maintenance.
