Would like to know how to remove the seat and gas tank of a 2001 Triumph Thunderbird.

I'm not sure I can help as my knowledge is on the older bikes but if their the same this is how to do it . At back of the seat there is a metal bracket with a bolt through it, this secures the seat to the fender if this is not there try looking at the under side of the fender in the same location for a bolt coming up that way. Remove this bolt and lift up on the back of the seat and pull straight back and the seat should come off. As for the tank there should be a rubber plug on the top of the tank about half way between the cap and the seat pry this off and under it you should find a nut remove the nut then lift up on the rear of the tank and pull straight back and off, of course you must first remove the fuel lines.
