There are 2 things that don't get mentioned in the referenced web site:
1) Higher speed rated tires are safer because they are more capable
2) Higher speed rated tires generally handle better - but that's done at the expense of the ride quality.
So you have to make the decision yourself about how these trade offs affect your situation.
