I have a 2000 Chevrolet Silverado 2500 extended cab. It is 4 wheel drive and the factory tire is a 245/75R16 on a 6.5 inch wheel. What is the largest tire that will fit this truck even if I need to get a wider wheel

Unfortunately, the largest tire that fits on a 6.5" rim is an LT245/75R16.

But to answer your second question I need to know how large the fenderwells are on your truck - and the folks that measure that sort of thing, think it gives them a competitive advantage, so they don't share.

Try finding a web site devoted to your vehicle and ask there.  I'll bet someone who has the same version of your truck has already done this.
